In 2018, there were 48 million cases of foodborne illnesses annually (FDA, 2018). The history of foodborne illnesses is said to have gone back as far as food has been consumed. To protect the consumer, the federal government had to create programs with strict guidelines before the sale of the product and because of this, the American food supply is the safest in the world. They set standards, making sure they are followed as well as conducting inspections. The Food and Drug Administration (FDA) is responsible for inspecting and regulating food being transported across state lines, except for meat, poultry, and eggs. They provide consumer protection by overseeing the safety of food that may affect public health (Sever, 2020). They have a very big jurisdiction and are more diverse than any other agency of food and drug regulation (Sever, 2020). “Founded in 1862, President Abraham Lincoln signed into law an act of Congress establishing the United States Department of Agriculture and at that time, more than half of all Americans were living on farms” (Clouatre, 2019). The United States Department of Agriculture inspects meats, poultry, and eggs as well as regulates the food being transported across state lines ensuring the safety of the nations food supply.
